Rosemary Chicken Skewers


Recipe Of The Month
  

Rosemary Chicken Skewers 

(makes 48 skewers)
 
Ingredients:
  • 8 (7 ounce) boneless skinless chicken breast halves (each 7oz.)
  • 48 bamboo skewers, soaked in water 30 minutes, drained (8 inch length)
  • 1 pint grape tomatoes or 1 pint cherry tomatoes
  • 1 cup olive oil
  • 1 cup lemon juice
  • 3 tablespoons chopped fresh rosemary
  • 4 large garlic cloves, pressed
  • 2 teaspoons salt
  • 2 teaspoons hot pepper sauce
  • 1 cup plain yogurt  
Directions:
1.  Cut each chicken breast half lengthwise into 6 thin strips. Thread each strip completely onto 1 Skewer, leaving 1/2" of skewer exposed at one end. Press 1 grape tomato onto end of skewer. Divide Skewers between two 15x10x2 inch glass baking dishes, stacking skewers if necessary.
2.  Pour oil into bowl. Whisk in next 5 ingredients. Pour marinade over chicken. Marinate 1 hour at room temperature, turning often, or cover and chill overnight.
3.  Preheat oven to 425 degrees F. Remove skewers from marinade and arrange on 2 large rimmed baking sheets; RESERVE MARINADE. Bake chicken until cooked through, about 8 minutes. Transfer to serving platter or covered container for storing in refrigerator.  (See note in #4)

4.  Transfer reserved marinade to a medium saucepan. Boil over medium-high heat 1 minute. Cool marinade 15 minutes. Strain. Pour 1/2 cup marinade into medium bowl; whisk in yogurt. Season sauce to taste with salt and pepper. ***Spoon any remaining marinade over chicken to moisten. Pour into tupperware, cover with lid and refrigerate if not using right away..

*Party Tip if bringing:  Take sauce out of refrigerator about 20 minutes in advance.  Reheat skewers in microwave in micro-safe container and place on serving platter..  Serve with sauce.

No time to cook?  Create fruit skewers with store-cut pineapple, watermelon, strawberries and grapes.

Nutrition Corner: Health Holiday Eating

 
Eating healthy during the Holiday Season is always a challenge but there are a few strategies to let you enjoy yourself, without all of the guilt.
  • Bring your own food:  Whether you're attending an office party or cookie-exchange with friends.  Offer to bring a dish to share.  This way, you're guaranteed to know there's one thin you can eat. (Check out our Holiday Recipe below!)
  • Eat before you go out: Curb your appetite by eating a healthy snack or light meal before you go out so you don't attack the buffet table.  Eat some healthy carbs (fruits or veggies), soup or some grains to fill you up.
  • Limit your portion size and menu choices:  Pick the smallest plate size available and be conscious of your food choices.  A few small indulgences at each event can really add up.  Pick one event to live it up and keep your healthy habits at the rest.
  • Make your first drink water:  Start the evening hydrated by by ordering a selzer water with lemon or lime and no one will be the wiser.  If you do indulge, alternate any libations with a large glass of water in-between rounds.

Understanding the Patient Protection and Affordable Health Care Act (Obamacare)



Are you trying to decipher how the Affordable Health Care Act (ACA) is going to affect the healthcare coverage for you and your family?  If so, you're not alone. We've gathered some resources to help you better understand the plan and coverage options to make the best decision possible.


And now the BIG QUESTION, will Obamacare cover Integrative Medicine?  It's a very important question as a 2011 Consumer Reports survey showed that 38 million Americans make an excess of 300 million visits each year to Complimentary and Alternative Medicine specialists, including acupuncture, massage therapists and chiropractors.

There's some good news.  In general, Chiropractic care WILL be covered under Obamacare provided that the state defined health care law accounts for coverage. (http://www.examiner.com/article/obamacare-and-chiropractic)  Chiropractic and other forms of alternative medicine may be more accessible now that insurance coverage will be available to more Americans.  And Chiropractors and other Alternative Healthcare Providers will be considered Primary Care Physicians.

Now, for the not-so-good news... California and Oregon, currently do not deem Chiropractic care to be an "essential health benefit". Because of this, their state plans do not have to cover Chiropractic services. This leaves patients that are covered under Obamacare the responsibility of covering these services out of pocket.   So while we may not receive many newly insured patients in our office until Chiropractic is covered, fortunately, the majority of insurance patients at InnerMovement are already covered through their workplace and statistics are showing in favor of these plans staying the same with additional coverage for Maternity, Dental and Pediatric care.   

In a nutshell, if you already have Chiropractic, Massage and/or Acupuncture benefits, you aren't likely to lose them. However it's a good idea to review your insurance policy yearly to make sure you're aware of your plan benefits. 

If you do not already have coverage and will be participating in Obamacare, your benefits will be as follows:
  • Chiropractic will not be covered until the State of California amends it's position on whether this is considered an "Essential Health Benefit".
  • Acupuncture will be covered under "Essential Health Benefits" but only for certain conditions.
  • Massage Therapy will not be covered.
BUT... not to worry,

Healthy Holidays

The holidays are here!  To celebrate this year, I visited my family.  What a wonderful trip!  It is so good to have done enough emotional clearing through N.E.T, meditation & body work, to be able to fully enjoy every member of my family (without the presence of my childhood wounds).  A thought occurred to me when I was on the airplane home, watching the Flight Safety video.  "Secure the oxygen mask on yourself before you help another with their oxygen supply".  This visual, so clearly demonstrated on the airplane survival video inspired this month's message.  We MUST make time for our own health before we do for others! Without our own emotional, physical, financial & spiritual foundation, we cannot effectively help others.
