Healthy Nutrition Recipe: Vegan Nut Butter Potato Chip Cookies

The holidays are about enjoying yourself & this recipe will satisfy your desire to be indulgent without the guilt!  Surprise your friends & family with this delicious treat!
Vegan Nut Butter Potato Chip Cookies
- makes about 40

  • 2 1/2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 3/4 teaspoons fine sea salt
  • 1 1/2 cups evaporated cane sugar (or your favorite sugar substitute)
  • 1 cup refined coconut oil
  • 1 cup chunky natural salted roasted almond butter or peanut butter
  • 1 Tablespoon molasses
  • 1 teaspoon vanilla extract
  • 1/4 cup ice water
  • 2 cups coarsely crushed Baked Kettle potato chips (they're Vegan!)

  1. Preheat oven to 375.
  2. Line baking sheet with parchment paper.
  3. In a medium sized bowl sift flour, baking soda and salt. Set aside.
  4. In a large bowl combine sugar, coconut oil and nut butter of choice and mix on medium to high speed until creamy. Add molasses, water and vanilla and mix until combined.
  5. On low speed add in flour mixture slowly.
  6. Add potato chips until combined well while not over mixing.
  7. Make dough balls about 2tablespoons and place then about 2-inches apart on lined baking sheet.
  8. Smash balls to about 3/4 inch thick then make crisscross pattern with back of fork.
  9. Bake until slightly brown at corners, about 13-15 minutes.
Cool on a wire rack & try not to eat them all before sharing!

Enjoy a Stress-Free Holiday

If I had to choose one month out of the year that has the worst effect on our health, December would win hands down. Not only are we struggling with never ending to-do lists and pressure-driven money stress, but we also have to face our old family wounds being drudged up over eggnog. Patients seem to exist in such a perpetual state of stress that holiday activities, generally considered enjoyable, have become dreadful. Compound that with every sugar laden indulgence surrounding us from all angles with no time to exercise and you've got a recipe for disaster.

This year, don't let stress run the show! Stay on track with your "wellness lifestyle". Get adjusted, it increases your immune system and helps your body adapt to stress. Relax with a Massage, you'll be nicer to your in-laws I promise. And pick up a carrot stick instead of a cookie if you can. Stress makes you sick (see Dr. Broosan's research in the previous post), it packs on the pounds (check out our nutrition tips) and it robs you of the moment (try our stress busters)! Along with family gatherings, celebration, and joy, the holidays can also bring with them higher levels of stress. Stress is one way to set off the body's "fight or flight" system. This system (known as the sympathetic nervous system) is intelligently designed to allow the body to adapt to life threatening situations. The problem arises when we have high stress levels chronically. You see, we were not meant to remain in a "fight or flight" state for long periods of time and yet this is exactly what happens to many of us on a daily basis. Add a little more stress (i.e. the holidays), and guess what happens to a lot of people? They get sick! Ever notice that when you are stressed out, you are more likely to get sick? It's not a coincidence.

Don't become sedentary as the weather turns cold

During the colder months of late fall and winter, we tend to stay indoors to avoid the chill and end up becoming sedentary creatures. We indulge in holiday sweets and treats, savory gravies at Thanksgiving and those "why-not-just-one-more" holiday hors d'œrves. While occasional indulging during special times is understandably impossible to resist, be sure not to sabotage all the hard work and exercise you've already done.


November is the month during which we take a look at our surroundings and express gratitude for everything we have been given. But besides family, friends and food there is another gift that most of us overlook: the gift of "you"! Don't let your health fall by the winter wayside, but make proper nutrition a year-round commitment.

Research shows that the top 10 leading causes of pain and chronic illness can be either put off or prevented all together through lifestyle choices. Each and every decision you make today can and will impact the quality of your life in the future. Healthy Nutrition Recipe(s)-of-the-Month

Add these dishes to your Thanksgiving table this year as they are not only delicious but packed full of antioxidants & healthy nutrition!



Whole Wheat Dairy-Free Pumpkin Pie

Cut back on the heaviness and fat of regular pumpkin pie while still enjoying this delectable holiday favorite!

One 9 inch whole wheat unbaked pie crust

2 eggs

1/2 sucanat or brown sugar

1 1/2 t. cinnamon

1/4 t. ground nutmeg

1/4-1/2 t. ground ginger

1/4 t. salt

1 3/4c. cooked pumpkin puree

1 c. vanilla soymilk

Directions:

1. Pre-heat oven to 450.

2. Beat eggs until frothy.

3. Add in spices and salt.

4. Add pumpkin and soymilk and beat until smooth.

5. Pour into pie shell.

6. Bake at 450 for 10 minutes.

7. Reduce heat to 350 and bake for 30-35 minutes.

Can be served warm, chilled or at room temperature. If serving warm, allow to cool slightly before serving.





Cherry Cranberry Sauce

Enjoy this healthy and tasty twist on a classic. Good for days after for sandwiches too!

3/4 c brown rice syrup

1 cup water

1/2 cup port, or other sweet red wine

1/4 teaspoon ground cinnamon

1/8 teaspoon freshly grated nutmeg

1/2 cup dried tart cherries

1 12-ounce package fresh or frozen cranberries

1/2 cup well-chopped toasted walnuts
Directions:

1. Combine brown rice syrup, water, port, cinnamon and nutmeg in a medium stainless steel saucepan.Stir frequently until mixed well. Add cherries and cook for 1 minute. Stir in cranberries. Reduce heat and simmer until about half the cranberries pop, 10 to 12 minutes. Remove from the heat.

2. Stir in walnuts. Cool completely.

Serve chilled.

Does eating healthy really make a difference?

We all know that a proper diet is good for us. However, many people think that eating healthy is an impossible luxury. It's actually a lot more achievable than you think. The sooner we realize that eating well is an absolute requirement for health, the sooner we can take responsibility for our health. Sure, it may be easier to go to a fast food "restaurant" and pick up "cheap" meals, but doing so will lead us away from health and is much more costly in the long run.

So what are our genetic requirements to express full health? What is healthy and what is not? And, where can we go to for this information? While one may think the recommended daily allowance/intake (RDA/RDI) is helpful, RDA/RDI is based on how much of a vitamin/mineral is needed to avoid deficiency. To make this clear, it is not based on how much you need to be HEALTHY. It's based on how much you need to not get SICK. That is a HUGE difference. Would you rather be healthy or just not be sick?? Let us help you get on the path to wellness and clear up the confusion about what is truly healthy and how to best get there.

Healthy Nutrition Tip-of-the-Month: Vegan Brown Rice Krispie Treats

Here is a healthy Halloween Treat that's fun to make and enjoy with the whole family! Vegan Brown Rice Krispie Treats


Ingredients
  • 1/2 cup of organic all natural crunchy peanut butter (salted)
  • 1/2 cup of brown rice syrup 
  • 3 1/2 cups of brown rice krispies cereal
  • 1 teaspoon organic vanilla extract
  • 1/4 cup of vegan chocolate chips (optional)
Makes 9 squares.
Directions
Put peanut butter, rice syrup, and vanilla into a small sauce pan and heat over a low heat for a few minutes until the mixture is liquid.
While the mixture is being heated, spray a large bowl with cooking spray before adding the rice cereal. Pour the peanut butter syrup over the cereal and combine until all of the rice krispies are evenly coated (you may have to work it a little).
Transfer krispies into an 8x8-glass baking dish that has been lightly coated with non-stick cooking spray. Pat them down and make them nice and even, pop in the fridge about an hour or so, then cut em' up and enjoy!
If adding the chocolate:
After you have combined the cereal and syrup, stir in ¼ cup of chocolate chips. Make sure the syrup is not too hot, give it a few minutes to drop in temperature so the chips will stay in tact.
Once the chips are stirred in, place into the baking dish and chill.

If someone is allergic to peanuts, they can use organic all-natural salted almond butter but better if it isn't the raw kind.

Demystify your fears of Acupuncture & Chiropractic

Happy October! In keeping with the theme of Halloween, I'd like to address some of the common fears associated with Chiropractic care. It is completely understandable that the noise of spinal adjustments and the perceived twisting of the neck is cause for concern for most people.

Innately, we are aware that our cervical spine, brain stem and spinal cord are vital to our health and without proper education even the term "adjustment" can seem "scary". But I'd like to put some perspective on those fears and hopefully alleviate them through education just as I do for new patients on a daily basis in my practice.


Statistics show that only 1 in 5.85 million patients are injured by a Chiropractor. To put this risk into perspective, if you drive more than a mile to get to your chiropractic appointment, you are at greater risk of serious injury from a car accident than from your chiropractic visit. Did you also know that 1 in 3 hospital visits are associated with the use of aspirin or NSAID pain relievers like ibuprofen. So to pop a pain reliever or get one from your doctor for back pain is statistically more scary than the adjustment.

Increase your metabolism with Qi Gong Breathing Exercise

Breathing exercises are a powerful tool used in Chinese medicine. Try this ....

Prior to each meal: 2 minutes before you eat, do this metabolic boosting breathing exercise: For the first minute of this exercise, place both of your hands below your belly button and take a few long slow deep breaths. Feel your hands rising on the inhale and descending on the exhale-this is focused deep breathing. Do this for the first minute.

It is important to note, a primary function of digestion is to break food into microscopic bits that can be sent to your cells and combusted with oxygen to release energy into the body. Over 90% of our energy comes from oxygen + food. That is why focused breathing is so important prior to each meal.

For the second minute of this exercise, squeeze all the air out on your exhale by bringing the abdomen toward the spine. Now do not worry about inhaling; just focus on bringing your belly toward your spine. Do it as quickly and as comfortably as you can. Imagine you are fanning a fire with bellows of air to make the fire grow.


After your meal, do the following for digestive health and to increase longevity: Bring both hands over the left side of your rib cage, below the heart. This is where the stomach is located. Circle your hands over the stomach area about 50-100 times moving from the right (liver) side of your body toward the left (heart) side of your body.

Congratulations! You just increased your metabolism! This is also a very simple yet powerful practice you can do each and every day.

Focus on good posture

Hi Everyone!

This month we are focusing on the importance of good posture. I like to tell patients that having good posture is as essential for spinal health as brushing your teeth is for dental health. That seems to be an analogy most can relate to. As a matter of fact, I think most of us take better care of our teeth than we do our spine. Why is that? If the teeth decay or are lost, it does not dramatically effect health and can be remedied quite easily with modern dentistry. If the spine decays and becomes arthritic we know scientifically that nerve interference occurs and overall health diminishes.

This happens often without pain but many times is also associated with pain, loss of ability and function. Therefore we encourage you to bring your BACK to the FRONT of your mind when it comes to your health. Be sure to include spinal health checks in your routine health care and make an appointment to see us if you are in pain or suffering any loss of range of motion. Until our next adjustment...

EXERCISE your Freedom!

If there was a pill that had even half of the benefits as movement, everyone would be taking that pill and paying lots of money for it. Moving your body has documented benefits for almost every ailment known to man. It makes you feel better by bringing oxygen to the cells and lubrication to the joints. It makes you look better by improving muscle tone and posture. It even makes you smile more by increasing serotonin levels in the brain. We are mostly familiar with active forms of movement like hiking, yoga & weight lifting but most people don't know that passive forms of movement are just as important to your health.

Chiropractic Treatments and Massage are two of the most widely used forms of passive movement. These treatment modalities restore normal movement to injured, fixated joints and tight, painful muscles both if not corrected, create pain & decreased health.

Movement is a required nutrient that we just aren't getting enough of. So if you can make it a goal to move more than you sit each day through both passive and active forms of movement, you'll be on your way to wellness. Until our next adjustment...

Start your Summer!

So far, the popular concepts on ideal weight and weight loss have not resulted in happier, healthier Americans. As we all know, obesity rates are only rising. And while it is true that increased weight leads to joint wear and tear, diabetes, heart disease, hormone imbalance and other health issues, it has not proven helpful to stress this. I think a radical new approach is necessary. My suggestions to patients who struggle with weight are simple but if applied, can be absolutely liberating. I tell patients to either accept and love themselves exactly as they are fully and totally right now, conscious of their own choices OR change their habits!

Either of these choices will result in more energy and a happier life. If you really accept that there are no other choices besides these two and you become okay with your choice it releases guilt, victim mentality and self-condemnation. If you choose to change and release the weight, we have a nutrition program, exercise recommendations and specialists to help monitor progress and document your success! And if the choice made is to accept yourself fully as you are, we'll let you know that we already have!

Congratulations to our Winning "Mother-of-the-Year"

After reading our entries for the Mother of the Year contest, I was so happy to surprise the Winning Mom! Her own mother, who praised her daughter for overcoming many obstacles in raising her child, nominated her. Her story sang of perserverance and dedication of this deeply committed mother who has given her child a warm home filled with love and laughter.

Self-discovery and Emotional Healing Leads to the True You

As the season turns and flowers bloom, newness begins to surround us. During this time I am reminded of the importance of having newness within. If we have not spent time unraveling our childhood experiences and wounds, how can we ever say it's a fresh new day? For example, if a child has lost a parent, a feeling of abandonment may often carry into adulthood. This may express itself as a deep feeling of longing for someone or something to fill that void. This "past" wound is likely to lead to "present" relationship problems or issues such as overeating or overspending. When we ignore our childhood wounds indefinitely, our bodies can even begin to express our emotional pains physically.

We all carry the risk of getting stuck in patterns of automatic reactions from our past experiences and from this place we are unable to fully enjoy the beauty that exists in the moment. Don't Let Your New Year's Resolutions Fade Away

Greetings!

At this point many of us are starting to feel the hopeful aspirations of our New Year's resolutions fade away. Beyond that many of us may be once again putting ourselves down for our glaring imperfections. Striving for perfection seems to be one of the most accepted illusions of our time.


Trying to be the perfect parent, coworker, spouse or to have the perfect body, status or income is an obsession each of us suffer from on one level or another. But the truth is that this perfection we all unconsciously seek will never arrive nor was it meant to. Imperfection is part of our design. Light cannot be without darkness, peaks do not exist without valleys, yin must be balanced by yang.


But knowing this is only the first step. Accepting it and therefore accepting ourselves in all of our imperfection is the ultimate freeing destination. A tree grows, its leaves fall, its fruit ripens than rots. But the tree does not worry when its leaves are brown and wrinkly nor when its fruit is turning to soil. We are not trees, but just as nature reflects we too are meant to experience seasons as well as peaks and valleys.

So with your resolutions, goals and growth this year, just do your best everyday and allow that to be perfect. Consider your body's aches and pains and imperfections the same way. Your path to wellness will have its good days and its bad as long as your on the path that is enough. Until our next adjustment...

Happy St. Valentine's Day

Greetings!

From my heart to yours!

It is said that St. Valentine chose to suffer death rather than renounce his religious principles. Stories of suffering are common throughout history and one could say that St Valentine was a wise man, brave and heroic for sacrificing everything in the name of his belief. Perhaps stories such as this have left the impression on us that suffering is brave and heroic, which may explain why so many of us choose to live our lives in pain or discomfort.

The truth is that we are meant to live to our fullest potential, which should not include pain and suffering.

I believe that we were each born to fulfill a specific purpose and suffering with back pain can be one of the biggest distractions from that purpose as it affects our entire well-being. There is nothing romantic or heroic about continuing to suffer from any type of pain (be it physical, emotional or spiritual) when there is someone compassionately willing and able to help.

It is my heartfelt intent to facilitate your body in eliminating pain. To connect with you in such a way that you understand your value and continue to take care of your spine and nervous system. Don't be a martyr. Don't suffer needlessly. Take responsibility for your health and by doing so, your first step on the path to wellness. Until our next adjustment...
